Inspired by a trip to the farmer’s market this weekend and sunny weather, we looked at all this beautiful fresh fruit around us and thought of the summer ahead with barbecues and long, warm nights.
These times are made better with good eats and good friends, so we’re bringing you two different fruit salsa recipes to turn the traditional chip adornment on its head: a pineapple/kiwi salsa that’s sweet, hot, and tart, and a colorful watermelon pico de gallo from a personal favorite of one of the blog authors, the Pioneer Woman.
Pineapple Kiwi Salsa (From How Sweet It Is)
We love this one for the rare combination of sweet, tart kiwi and pineapple, and for its sharp zing with red onion and jalapeno.
1 kiwi, peeled and chopped
1/2 jalapeno, chopped
2 pineapple rings, chopped
2 tablespoons chopped red onion
3 tablespoons chopped cilantro
The juice of half a lime
Combine all ingredients in a bowl and stir to mix. Season with salt and pepper to taste–remember to add salt sparingly if you’re watching your sodium!
Serving suggestion: Serve this tangy, spicy gem with grilled shrimp skewers or crab cakes.
Watermelon Pico de Gallo (from the Pioneer Woman)
1/2 whole small seedless watermelon, diced
1/2 whole red onion, diced
1 whole red bell pepper, seeded and diced
1 whole green bell pepper, seeded and finely diced
1 whole yellow bell pepper, seeded and finely diced
1 whole bunch cilantro, chopped
Juice of 1 lime
Toss all ingredients into a large bowl and mix well. Add salt to taste.
Serving suggestion: This sweet, colorful masterpiece goes well with a freshly grilled loin of pork or barbecued chicken.
